Caramel Apple Cider Pie

A tangy apple cider custard topped with burnt sugar caramel, this pie was inspired by a recipe we saw on Lottie + Doof, one of our favorite food blogs. It takes advantage of one of the last sweet ingredients available from our farmers-wonderful apple cider. We boil the cider until it is 1/4 of its original volume to get an intensly flavored syrup, then we whisk it with eggs, sour cream and a shot of Calvados for a rich custard. For the caramel, we melt the sugar until it just begins to smoke and carefully mix in heavy cream.
   What makes this pie really work, is that it hits all the tastebuds: sweet cider, sour cream, slightly bitter burnt sugar caramel, and a touch of salt in the crust. 
   


Filling ingredients: Apple cider, sugar, sour cream, salt, eggs, vanilla, Calvados, cream.

Crust ingredients: Flour, sugar, salt, butter, water, red wine vinegar

Allergens: Eggs, cream, sour cream, Calvados (alcohol)
